Babaganoush
1 large Eggpant
2 Large cloves of Garlic
1/4 cup finely chopped flat leaf parsley
2 table spoon lemon juice
2 table spoons Tahini
Dash of salt
Preheat oven to 450
Prick eggplant with fork 10 times then place eggplant on foil lined cookie sheet
and bake 20 min till soft.
Let cool then cut eggplant in half length wise. Drain liquid and scoop out
insides and plance in food proccess
with garlic, lemon juice and tahini. Proccess till smooth. Garnish
with Parsley.
