Croquettes
Ingredients:
6 Table Spoons of Butter
1/2 Cup chopped Parsley
1
Medium Onion chopped and sautéd
1 1/2 cups Flour
4 1/2 cups Milk
3 cups
meat (process leftover meat in food processor)
2 eggs mixed in a bowl
bread crumbs in a bowl
Olive Oil
Preparation:
This will make 2 batches
Bring the milk to a simmer on
stove set to medium heat (#3 on double burner for us)
add salt and pepper to
taste and keep warm
Melt butter in another and sift flour in to butter
making a doughy ball.
Now slowly add the hot milk to the dough.
Stirring and folding till light brown (like the color of our walls)
It
should hold together and slide on the pan.
Move to large bowl, dust top with
flour and let cool to room temperature.
Once cooled put in the refrigerator
for at least 4 hour or over night
Remove the dough and form it into thumb
sized croquettes
Heat skillet to medium heat with olive oil
dip croquettes
in egg then bread crumbs
fry till golden brown on all sides
