Gazpacho
1 15oz Can of Tomato Sauce (or 2 ripe tomatoes)
1 Cucumber - Peeled
1 Green Pepper - Seeded
2 TBS Olive Oil
3 TBS Red Wine or Sherry Vinegar
2 Medium Garlic Cloves
1 tsp Salt
11/2 tsp Cumin
15oz of Ice Water (we use the can from Tomato Sauce)
Combine all ingredients in blender. Blend on high till smooth
Better if severed cold. You can add additional water to thin out if you
like. We also add more vinegar and cumin to give it more of a kick.
When severing add the following as toppings
Diced Cucumber
Diced Tomatoes
Diced Green Peppers
