Pumkin Curry Soup
2 table spoons olive oil
1 cup minced onions
1 table spoon red curry paste
curry powder to taste (we use lots and lots)
1 table spoon fish sauce
1 table spoon brown sugar (we use splenda brown sugar)
15 oz of chicken or vegtable broth
1 can of coconut milk
1 can Packed pumkin
1 table spoon lime juice
chopped cilantro and green onions
heat oil in soup pot and stir fry onions
add cuury paste, fish sauce, stir till paste disolves. Add brown sugar and and stir till onion are slightly carmelized.
poor in broth, coconut milk and pumkin and stir while bringing to boil.
simmer 5 min.
add celantro and green onions just before serving.
