Torejas

Ingredients:
6 Cups Milk
4 Eggs
1 1/2 Cups Sugar
6 Table Spoons Cinnamon
1 Loaf if sliced french or Italian bread. Crust should not be hard. Purchase a few days before so it is not soft.

Preparation:
Place milk and 3 table spoons of Cinnamon in a wide bowl, Mix very well
Next to that use a cooling rack and cookie sheet (used to drain Milk)
Whisk eggs in small bowl with 1 tablespoon of sugar, just big enough for one slice of bread
Heat griddle to 400
Mix remaining sugar and cinnamon in bowl, have a shaker to it put in

Take a few slices of bread and let them soak in the milk till saturated. Squeeze any hard spots to get the mink in.
Let the bread drain on rack for 2 or 3 minutes
Dip in eggs
Cook till brown on both sides
Coat with cinnamon sugar while still hot. This will create the syrup if done right.
Place in large tupperware

Repeat until tupperware is full or you are out of bread.
There should be a pool of syrup at the bottom of the container.
Flip it over and let sit for an hour or so letting the syrup coat the Torejas, then eat.
Continue to flip it over and back again when serving.
